I think the most Christmas carol-y carol I know of is the traditional "Hark, the Herald Angels Sing." The music was composed by Mendelssohn, and he once reportedly claimed that it would never fit with sacred words as it was too exuberant and joyful. He was obviously wrong in that estimation!

Gustav Holst's choral fantasia "Christmas Day" is great, too.

I love that Judy Garland version of "Have Yourself A Merry Little Christmas"! But I prefer the classical version of "For Unto Us A Child Is Born":

And let's not forget Trans-Siberian Orchestra!

So, you probably know that one of my favourite Christmas albums is this one. Well worth looking in to buying - you can listen to the samples on Amazon to see if it is your thing.

Anyway, some other favourites of mine:

Ah yes, we sing that one here in the States as well :D

Another one is Jingle Bell rock... I'm not to fond of it, but as I'm singing it with a small group for my upcomming choir concert I figure I'd post it...

Our dance isn't as cheesy though xD And since I made it up it has some cheerleading moves in it.. haha

This Dutch indie rock band just made an interesting Christmas album with mostly original material, worth checking out:
